Easter is here with us again, so am sharing with you my delicious Kenyan Easter table menu. Pan seared Lamb chops, finished int he oven with baby carrots, spring onions ( scallions whites) and Mukimo, Kenyan mashed potatoes with corn, peas and greens ( watch the video to see my interpretation of this Kenyan classic dish).

INGREDIENTS FOR THE MENU

For the Lamb
2 Lbs Lamb Rack, cut into individual chops ( 8 pcs)
Kosher salt and black pepper to taste

Marinade
1 Tbs Garlic , chopped
1 Tbs Ginger , minced
4 sprigs fresh thyme, chopped
2 sprigs Rosemary, chopped
1 sprig sage, chopped
1 Tbs Parsley, chopped
1 Tbs Cilantro, chopped
1 Lemon, thinly sliced
1/3 c Olive oil
Kosher salt and pepper

For the Mukimo
2 Cups Corn ( used frozen available at Indian and Latin stores)
4 Idaho or russet potatoes
Kosher salt and pepper to taste

For the Green for Mukimo
1 Tbs Garlic
1/3 c Olive oil
2 c Frozen peas
4c Baby spinach
1/2 c Scallions greens (tops) ,chopped
Kosher salt and pepper

For the Vegetables
1 Bunch baby carrots, peeled and cut to desired size
2 Bunches scallions, cut in half , roots cut off and greens reserved
1 Tsp Marinade,
1 Tbs Water, optional
Kosher salt and pepper to taste
1/2 lbs green beans, blanched

For the Tomatoes
1/2 lbs Cherry tomatoes, mixed colors
1 tsp marinade
olive oil
Kosher salt and pepper
