Authentic Kerala Dishes With My Personal Touch 😍

Ingredients

Rice Flour - (roasted ) Idiyappam flour - 1cup
Hot Water -1 cup
Thick Coconut milk -1/2 to 1 cup accordingly
Sugar -1/2 to 3/4 cup
Salt -
Cardamom Powder -2 pinch (opt )
Cumin -1/4tsp (opt )
Coconut Oil or ghee -1/4tsp

Method

Take 1 cup of Idiyappam Rice flour and add 1 cup of hot water in a bowl. Mix well with a fork Add coconut milk in batches. Mix with the fork to break the lumps. You can mix it in the blender. Add cardamom powder(optional).Add cumin seeds(optional). If you want you can add jaggery syrup , but adjust the coconut milk accordingly (the consistency is important).

Add ½ cup of sugar. Also add a pinch of salt. Check the sweetness. Mix well with a spoon. On the back of the spoon the batter should be coated evenly, that is the correct consistency for the batter. ¼ tsp of coconut oil.

Grease the plate that you are going to steam in. add the batter into the plate/cake tin.Cover the cake pan/plate with aluminum foil, to avoid the water falling into the batter,

After the steam is released leave it for 10 mins. Allow the steam to come on medium heat.

Cut it into your desired shape.
