[ASMR]【豆腐鮮蝦煲】零失敗新手也能做！｜Shrimp and tofu pot

「豆腐燴白菜」這道家常料理
也是常出現在我們家飯桌上的一道菜
非常經典、原汁原味
豆腐白菜一口吃
再搖一勺湯汁淋飯上
簡直就是巨好吃！
我等不及了，你們看了就知道！

（今日份量： 4人份）

🥣需要準備的材料🥣
👉雞蛋豆腐 1盒｜ tofu 1box
👉鮮蝦 8隻 ｜ shrimp 8pcs
👉金針菇 1包｜ enoki mushroom 1pack
👉蠔油 2大匙｜ oyster sauce 2T
👉醬油 2大匙｜ soy sauce 2T
👉水 300克｜ water 300g
👉鹽巴 1(⅛小匙)｜ salt 1(⅛t)
👉白胡椒 1(⅛小匙)｜ white pepper 1(⅛t)
👉蒜頭 30克｜ garlic 30g
👉蔥白 10克｜ scallion stalk 10g
👉蔥綠 20克｜ green scallion 20g
👉辣椒 10克｜ chili pepper 10g

⚠️簡單哥小提醒⚠️
1大匙 = 1湯匙 = 15ml
1小匙 = 1茶匙 = 5ml

🥣備料🥣
01:03 ①將蒜頭去蒂頭，拍扁後切成蒜末
01:35 ②將蔥切成蔥花
01:54 ③將辣椒切成圈狀
02:03 ④將金針菇切去尾端，均勻的剝開
02:14 ⑤打開雞蛋豆腐，切成片狀
02:45 ⑥將蝦子去殼，拔出腸泥取其蝦仁
03:13 ⑦將蝦子劃刀開背


🥘開始簡單製作🥘
03:32 ①熱鍋下油，加入豆腐煎至金黃後瀝起
04:12 ②原鍋原油，加入蝦仁煎至半熟後瀝起
04:49 ③原鍋再加入蔥白、蒜頭爆香即可
05:01 ④關火加入金針菇鋪底，鋪上豆腐擺齊
05:22 ⑤開火加入蠔油、醬油、水煨煮至滾起
05:46 ⑥轉小火燉煮5分鐘
05:01 ⑦加入蝦子、辣椒、鹽巴、白胡椒上蓋燜煮
06:13 ⑧燜煮一分鐘後開蓋，灑上蔥花即可

🥣preparation🥣
①cut off the garlic glans, smack the garlic firstly, then mash the garlic into pieces
②chop green onion
③chop chilli pepper
④cut off the end of enoki mushroom, then equally distributed
⑤slice tofu
⑥de-shell shrimp firstly, then devein it after shelling
⑦cut the back part of the shrimp

🥘cooking🥘
①preheating the pot then add oil and tofu, pan-fry it until golden for two side then set aside
②add oil and shrimp in the same pot, pan-fry it util median-rare then set aside
③Stir-fry scallion stalk and garlic in the same pot
④turn off the heat, then put enoki mushroom and tofu tidiness
⑤turn on the heat, then add oyster sauce, soy sauce and water to simmer
⑥turn low heat then simmer for 5 minutes
⑦add shrimp, chili pepper, salt and white pepper braised in a covered pot
⑧braised for 1 minutes then uncap, use green onion to embellish, and you are ready to serve
