Carrot Cake Cupcakes with Cashew Frosting:
(recipe from True Comfort Cookbook)

Cupcakes:
1 cup almond flour
1/2 cup oat flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. pink salt
1 1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/8 tsp. ground nutmeg
2 eggs
1/4 cup virgin coconut oil, melted
1 tsp. fresh lemon juice
1/2 cup pure maple syrup
1/4 cup coconut cream
1/2 tsp. pure vanilla
2 cups shredded carrots

PREHEAT OVEN TO 350
LINE PAN WITH 12 MUFFIN TINS
MIX FIRST 8 INGREDIENTS TOGETHER
IN SEPERATE BOWL, MIX LAST 7 INGREDIENTS, FOLDING CARROTS IN LASTLY
MIX DRY INGREDIENTS WITH WET AND SCOOP INTO MUFFIN TINS
BAKE 15 MIN OR UNTIL TOOTHPICK COMES OUT CLEAN

Cashew Frosting:
1 1/2 cups raw cashews
1 TBSP pure maple syrup
1 tsp. cinnamon
pink salt

COMBINE ALL INGREDIENTS AND 1/4 CUP OF WATER IN BLENDER
BLEND UNTIL COMPLETELY SMOOTH
FROST WHEN CUPCAKES ARE COMPLETELY COOL
STORE IN AIR TIGHT CONTAINER AT ROOM TEMP FOR UP TO 5 DAYS
