Maimoona Yasmeen Recipes - Shikampur is a Mutton Cutlet/patties/kebab filled with onion mix. This had been one of the favorite dishes of Hyderabadi Nawabs making it a royal dish. Shikampur can be served at lunch or dinner with Hyderabadi Khatti Dal or Dahi Ki Kadhi and plain rice.

Ingredients for 5-6 servings

Boneless Mutton (Medium Sized Pieces) – ½ Kg
Chopped Tomatoes – 2
Bengal Gram (Chana Dal) – ½ Tea cup
Chopped Onion – 1
Ginger Garlic Paste – 1 Tablespoon
Red Chilli Powder – 2 Teaspoons
Turmeric Powder – ½ Teaspoon
Salt – 1 Teaspoon
Spices – ½ Teaspoon
Mint Leaves – ½ Bunch
Chopped Coriander – ½ Bunch
Cooking oil – 2 Tablespoons and for frying the shikampurs
Ingredients For Fillings:

Diced Onions – 2
Salt – ¼ Teaspoon
Lemon Squeezed – ½
Chopped Coriander – 1 Tablespoon
Chopped Mint Leaves – 1 Tablespoon
Thinly Sliced Green Chilli - 1

Procedure:

1.In a pressure cooker add mutton, tomatoes, bengal gram, one chopped onion, one tablespoon ginger garlic paste, one teaspoon salt, 2 teaspoons red chilli powder, mint leaves ½ bunch and chopped coriander ½ bunch, two tablespoons of cooking oil and two cups of water.

2.Close the lid and pressure cook for 15 min on medium flame.

3.Remove the lid, stir well till the mixture get s dry and leaves the oil.

4.Keep this mixture aside for cooling.

5.Grind this mixture into a fine paste and add ½ teaspoon of spices to this paste.

For fillings:
1.Take an empty bowl, add two big diced onions, 1/4th teaspoon salt, ½ lemon squeezed, one tablespoon of chopped coriander, one tablespoon chopped mint leaves, one green chilly thinly sliced.

2.Mix well and keep it aside.

Procedure to mold the Shikampur or Mutton Cutlets/patties:

1.Be ready with the mutton paste, onion fillings and water.

2.Dampen your fingers and palm with water and then flatten the cutlets/patties/kebab filling each of them with ½ teaspoon of onion mix.

3.You can make 12-14 shikampurs or mutton cutlets/patties/Kebab from this mutton paste and fillings.

Frying:

1.In a frying pan, add one tablespoon of cooking oil.

2.Spread the shikampurs on the frying pan and semifry on both sides till they turn brown. You can use oil as per convenience.

The delicious shikampoors are ready to be served.
