Today I will be canning Roma tomatoes from my garden. The tomatoes are first placed in boiling water for 1 minute and the skins are removed. Then lemon juice is placed in the jars along with salt and the tomatoes are canned with a pressure canner. The process is simple and gratifying and results in no loss of freezer space! I show the process step by step from harvest to the finished canned tomatoes. This garden is in northwest Louisiana, zone 8b. The garden is an organic garden where principles from Back to Eden gardening, Ruth Stout gardening, and regenerative agriculture are used. Enjoy the video!
