🍏 Homemade Apple Pastila (Soft & Fluffy)

Ingredients
• 600 g apples (peeled and diced)
• 100 ml water
• 40 g instant gelatin
• Optional: 1 tbsp sugar (I made it without)

Instructions

1. Prepare the apples
Wash, peel, and dice the apples into small cubes.

2. Cook the apples
Add the water, place the apples on medium heat, and cook until soft (about 10–15 minutes).

3. Blend the mixture
Blend the cooked apples until smooth.
Add the gelatin and mix well until fully dissolved.
Let the mixture cool to room temperature.

4. Whip the mixture
Beat with a mixer on high speed for about 20 minutes.
Important: It may look like nothing is happening at first, but around the 20-minute mark the mixture will change—
it will become 2–3 times larger, turn white, and get very fluffy.

5. Pour into a mold
Line your mold with parchment paper and spread the whipped mixture evenly.
Let it set completely before slicing.
