2 bay leaves
3 cloves
3 tsp salt
2 tsp brown sugar

2 tsp rosemary
1/2 cup white vinegar
1 cup pineapple juice
5 tbsp sunflower oil

►Chicken

2kg or 4.4lbs chicken thighs or breast
1 tsp salt
1 cup marinade

►Salsa Verde

2 - 3 jalapenos (preferably fresh ones)
2 boiled garlic cloves
1 small onion
Zest of lime
1/2 tbsp lime juice
Bunch of coriander
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1/2 tsp garlic powder
1/4 water

►Glazing Chicken

1 tbsp oil
3 tbsp marinade
2 tbsp water
Chopped chicken
Leftover juices from the chicken

►Salsa Roja

400g roma tomatoes
2 red serrano peppers
1 jalapeno pepper (optional)
1 chipotle pepper
Quarter onion
1 garlic clove
Zest of lime
1/2 tbsp lime juice
Bunch of fresh coriander
1 tbsp mexican oregano
1/2 tsp salt
1/2 tsp black pepper
1/4 cup water

►Tacos Prep

Guacamole
Onions
Coriander
Salsas
Small corn or wheat tortillas
Cooked Chicken

Serve with salsas and tortilla chips
