Trying to eat more protein, but still craving pasta? This is the recipe for you! This high protein pasta salad is loaded with fresh veggies and protein This is a naturally gluten free pasta salad. Perfect for a quick dinner tonight, even better for leftover lunches for the week. Or bring it to your next cook out.

Ingredients for Salad
8 oz Chick pea pasta- cooked and cooled completely
1 lb Chopped chicken: Rotisserie, leftover or even canned works
1 C Broccoli slaw
1 C English cucumber- chopped
1 Red pepper- chopped
1/4 C Grated parmesan
2T Fresh basil: chopped
Salt and pepper

Ingredients for Salad Dressing
¼ C Extra virgin olive oil
¼ C Red wine vinegar
2 TBSP Dijon mustard
2 t minced garlic
Salt and pepper

Directions
-Cook pasta according to package directions and cool completely
-Chop cucumber and peppers
-Combine all salad dressing ingredients in a small bowl. Wisk thoroughly and set aside.
-In a large bowl, combine pasta, chicken, broccoli slaw, peppers, cucumber and cheese, mix well
-Add salt, pepper and salad dressing, mix well
-Add chopped fresh basil, mix well

Server immediately or chill for leftovers.
