And new beginnings call for something sweet. #Payasam being one of the star #desserts in festivals, here’s a wholesome, traditional #millet recipe for you all to try. Proso Millet Payasam made with jaggery is sweet and gives pink hued colour to the dish, similar to what we get in Murghan Temple as prasadam. INGREDIENTS:
Proso millet 1/4 cup
Moong dal 1/4 cup
Water 1.5 cups
Broken Cardamom 2-3nos
Reduced Full cream milk 1.5 cups
Jaggery syrup 3/4 cup (cooled)
Edible Camphor 1 pinch
Cashew 8-10
Ghee 2 tsp

For jaggery syrup: dissolve by heating 1.5 cup jaggery in 1/4 cup water, cool and add to payasam, as hot syrup may curdle the milk.

For reduced milk
Slow heat 2.5 cups full cream milk and reduce to 1.5 cup and use.
Fry chopped cashews in ghee and to payasam.
