🍂 Autumn Harvest Bowl
ingredients:

for the potatoes:* 2 cups mini red & white potatoes cut in half* 1½ tbsp olive oil* sprinkle of salt, black pepper, smoked paprika, fresh rosemary, thyme

for the chicken:
600g breasts* drizzle olive oil* sprinkle of salt, pepper, smoked paprika, fresh rosemary, thyme

for the quinoa:
1 cup quinoa 2 cups chicken broth
handful of dried cranberries
fresh oregano

for the quinoa dressing:
2 tbsp olive oil2 tsp Dijon mustard1 tsp brown sugarjuice of ½ lemonsalt & pepper to taste

instructions:
roast potatoes at 425°F (220°C) with oil & herbs for 25–30 min.
simmer quinoa in broth (15 min). whisk dressing: olive oil, dijon, brown sugar, lemon juice.
fluff quinoa; toss with dressing, oregano and cranberries.
sear chicken 2–3 min per side, then roast beside potatoes for 10–12 min (until 165°F).
rest chicken 5 min, then slice.

build bowl: quinoa → chicken → potatoes → caramelized red onions → extra cranberries + drizzle of dressing.
