Would You Try A Cocktail Made From Food Scraps?

Providence restaurant is one of the few 2 star Michelin restaurants in Los Angeles, infamous for its elaborate tasting menus and commitment to sustainable practices...BUT what you probably don’t know is that it’s home to one of the most innovative bar programs in the city. We spent the day with Providences bar manager Kim Stodel, who’s looking to find new ways to breathe new life into cast-aside ingredients.

Kim wanted the bar program to be novel in some way. When he got to Providence, he realized that nothing would overshadow the restaurant, so he stopped thinking about the hype of a program and started to focus on becoming part of the ecosystem of the Providence kitchen and how he could contribute.


In terms of pairings, he learned from the kitchen. They are economical, don’t waste a lot, and re-use things. This is important not just for the food world, or bar culture, this is important for the environment. Once he understood that we all have to become conservationists in our own ways, it became bigger than him. It became a game with parameters that he would play in. Yes, the cocktail program is appealing and yummy, but perhaps the biggest delight is that it’s also good for the environment.

According to Kim, you don’t need a Michelin-worthy kitchen or bar to repurpose your own ingredients. With a bit of commitment and creativity, anyone can integrate the zero waste policy into their daily cocktail.
