What's baking?
A short film exploring the making of traditional Goan bread Poi/Poee. The Goan bread is a delicacy introduced by the Portuguese and has been an integral part of the Goan cuisine ever since. It delights people from all strata of life. The rich and the poor both crave to have it on their table. The bread is baked in variety of forms i.e pao (light brown crust, fluffy inside), poee (flat, bran pouches), katren (crusty, four cornered), kankon (hard crusted, bangle shaped), etc.

However, all this won't be possible without the Goan podders. These podders work all night to deliver freshly baked Goan bread as the break of dawn. A percentage of the total baked breads is delivered home to home by the podder on his cycle and the remaining portion is sold to commercial bakeries.

Men with stained baniyans handling fancy sharp equipment working in dim lights the whole night. Sounds suspicious right? Well, I have used that suspense to grab your interest and open doors to the making of the Goan bread by these cute podders without whom this Goan delicacy would have been extinct.
