Baby Potato Fry Recipe:

Dry Roast and Grind:

Urad Dal - 1 tsp
Chana Dal - 1 tsp
Coriander Seeds - ½ tsp
Black Peppercorns - ¼ tsp
Fennel - ¼ tsp
Cumin - ¼ tsp
Dried Red Chilli - 10 nos
Sesame Seeds - ½ tsp
Coconut (grated) - 1 tsp

Other Ingredients:

Baby Potato - 500 gram
Water - 4 Cups
Oil - 1 tbsp
Mustard Seeds - ¼ tsp
Urad Dal - ½ tsp
Asafoetida - ¼ tsp
Curry Leaves - 10
Salt - To Taste

Instructions:

1. Bring 4 cups of water to a boil.

2. In a pan cook the baby potatoes in water for 12 mins.

3. Remove the skin of the potatoes and keep aside.

4. In a pan dry roast all the ingredients mentioned under Dry roast and grind. In a mixer grinder grind this to into a powder.

5. In another pan, heat oil, add mustard seeds, urad dal, asafoetida, curry leaves.

6. Add the cooked baby potatoes and saute for 2 mins.

7. Add the powdered masala and continue to stir fry on a medium flame until the masala is coated well on the potatoes and the potatoes are roasted well. This should take about 5 mins.
