OMG! This delicious fruit and nut bread makes and EXCELLENT break-fast or afternoon snack with a nice cup of tea! What's even better is that it is also great for you with healthful wholesome ingredients.

Ingredients:

1/2c All purpose flour
1/2c chickpea flour
1/2 tsp cinnamon
1/2c walnuts chopped
1 medium apple chopped into bite sized pieces
1TBS baking powder
1/2 tsp salt
1/2c liquid sweetener
1/2c raisins
1TBS olive oil
1/2-3/4c water (eyeball this as you may need more or less)

Pre-heat oven to 375 degrees
Combine dry ingredients and mix together
Add in dried and fresh fruit and coat with flour mixture
Add in liquid ingredients and mix until a thick wet paste forms
Grease a small loaf pan (or line with parchment paper) and scoop batter into pan. Smooth out evenly.
Bake for 30 mins or until top is golden brown and has cracks
Allow to cool to room temp before removing from pan and slicing
Store covered in fridge
