This homemade salted caramel is easy to make with just a few ingredients. The key is to carefully follow the right steps, which will result in a rich, thick and gooey caramel sauce.


Ingredients

Sugar 200g
Water 30ml
Heavy cream 35% 150ml
Butter 50g
Salt 1g


Weight of caramel 350ml


Instruction

1.Place 200g of sugar into a non-stick saucepan. Add 30 ml of water. This helps the sugar dissolve evenly and makes it easier to control the caramelization process (without water, the sugar can burn faster). Set the saucepan over low-medium heat.
Sugar starts to dissolve and bubbles appear. Let it boil without stirring at first.
2.Meanwhile, heat 150ml of heavy cream in the microwave until warm. (Cold cream can cause the sugar syrup to seize and clump, because of difference of temperatures; making it harder to recover)
Cut the 50g of butter into small cubes for easier incorporation. Set aside.
3.Once the syrup reaches a golden amber color, and all crystals dissolved( check with a wooden spatula) carefully pour in the warm cream gradually (to avoid overflow). Stir constantly between each addition. Be careful, as the mixture is very hot!
When heavy cream is added, boil down to 1 minute, then remove the saucepan from the heat.
4. Place the caramel into a blender cup. Add the cubed butter and salt to taste, then blend until smooth and glossy
5. Pour the caramel into a jar. It will be liquid while hot, but when refrigerated, it becomes thick and gooey.
