BEST AND FOOLPROOF SHAVUOT CHEESECAKE RECIPE

*This recipe can be made with regular dairy products as well they can substituted measure for measure for either or
** ALL INGREDIENTS SHOULD BE AT ROOM TEMPERATURE*****

-6 tablespoons unsalted butter, melted, plus more, room temperature, for pan
-15 graham crackers (each 3 by 5 inches), broken into pieces
-1⁄3 cup packed dark-brown sugar
-1 teaspoon packed finely grated lemon zest, plus 1 tablespoon fresh juice
-1 ¼ teaspoons kosher salt
-2 ½ pounds cream cheese (five 8-ounce packages), room temperature
-1 1⁄3 cups granulated sugar
-5 large eggs, room temperature
-1 cup sour cream, room temperature
-1 teaspoon pure vanilla extract

for the Jelly fruit glaze/topping
FOR THE JELLY TOPPING:
3 sheets gelatine or tasteless kosher gelatine powder
100ml cranberry juice
50g granulated sugar
200g fresh currants or any small kosher berries

MAKE THE JELLY TOPPING: To make the jelly, soak the gelatine sheets in a bowl of cold water for 5 minutes. Meanwhile, heat the cranberry juice with 150ml water and the sugar in a small saucepan, stirring until the sugar is dissolved. add gelatine

While the jelly is cooling, slice the fruits in half or leave full if small and press gently onto the top of the cheesecake. When the jelly mixture is cool, pour half of it very carefully on the cheesecake - TIP pour onto a back of a spoon so as not to disturb the surface of the cake. Return to the fridge for 10 minutes, then pour the remainder of the jelly mixture evenly over the top.

Tips:
Everything at room temperature

Water bath for slow cooking cover bottom of springform with aluminum foil, water should not get higher than 1/2

Bake at 350*F for 45 minutes and lower to 325 for 30-40 minutes until golden
COVER THE TOP RACK with aluminum foil if the top of the shavuot cheesecake becomes too brown!

After 20 minutes of cooling run pairing knife on side to release with ease the springform later

add coulis once fully cooled and
Cool 4-6h or overnight COVERED in the refrigerator

Then unmold
Knife in hot water to slice
Decoration strawberries jelly, coulis or ganache
