RECIPES:
Sourdough Chocolate Braid (adapted from "Artisan Sourdough Made Simple"):
2/3 cup milk
3 T butter
1 egg
2 T sugar
1/2 cup active starter
2 1/2 cups flour
1/2 tsp salt
Warm the milk and butter in a small sauce pan. Add the slightly cooled milk, butter, egg, sugar, sourdough starter, flour, and salt to a stand mixer until a dough forms. Let rest for 30 mins. With the dough hook, turn the mixer on low and run for 7 mins. Cover with plastic wrap and let rest overnight. In the morning, roll into a large rectangle, and spread melted chocolate on top. Working with the short end of the dough, roll into a tight log, and place on parchment sheet cookie tray. Cover the dough and chill about 30 mins. Using a serrated knife, cut the log in half lengthwise, leaving about 1 inch intact at the end. Crisscross the sections with the layers facing up until you have formed a full twist. Pinch the ends together and brush with remaining tablespoon of butter (melted). Let sit at room temperature to rise (about 1 hour or until puffy). Bake at 350 for about 20-30 mins or until golden brown. Once cooled, drizzle with more melted chocolate.

Sourdough Waffles:
2 cups flour
2 tsp baking powder
1 tsp baking soda
3 T sugar
dash of salt
1 cup sourdough starter
1 1/2 cups buttermilk
2 large eggs
2 T melted butter (or avocado oil)
1 T vanilla
Mix until combined. Ferment in fridge overnight. In the morning, take it out and fry cook in waffle maker.

Sourdough Apple Dumplings:
For the Crust:
1 cup flour
8 tablespoons butter (cold)
½ tsp salt
½ tsp sugar
1 tsp white vinegar
½ cup sourdough starter discard
Mix all together in stand mixer until well incorporated. Ferment in fridge overnight. The next morning, peel and core apples, cutting each apple in half. Fill the seed cavity with sugar and cinnamon, then wrap each apple half in the crust dough. Place in a parchment lined baking pan, and repeat with all the apple halves.
For the sauce:
2 cups maple syrup
2 cups water
1/4 cup butter
1/2 tsp cinnamon
Combine maple syrup, water, and cinnamon. Cook for 5 minutes and remove from heat. Add butter and cinnamon. Pour over the apple dumplings, and bake at 375 for 35-40 mins or until golden brown.
