Trying Celebrity Chef Signature Dishes: Jean-Georges Vongerichten “Molten Chocolate Cake"

Ingredients
1/2 cup (4oz) unsalted butter
2 tbsp All-Purpose Flour
6oz bittersweet chocolate (70% dark)
2 eggs
2 egg yolks
1/4 cup sugar
1/4 tsp salt

Steps
preheat oven to 450 F
butter and lightly flour 6oz ramekins and tap out excess flour, set on baking sheet
fill a small pot with a bit of water (1 inch deep) and bring to simmer
place chocolate and butter in heat-proof mixing bowl and place the bowl over the heated water pot
stir chocolate and butter until melted, then remove from heat and set aside
combine eggs, yolks, sugar and salt in a mixing bowl and vigorously whisk until thickened and pale (2 mins)
combine melted chocolate with egg mixture and add flour, mix just until no streaks remain. Don’t over mix!
add batter to ramekins, leaving room at top
bake until tops of cakes are set, but center still feels jiggly to touch (8-12 mins)
remove from oven and let cool for 1-2 mins, carefully turn over and let stand for 30 seconds before lifting ramekin
