Pumpkin SnickerDoodle Recipe:
Ingredients:
1 cup unsalted butter
1/2 cup canned pumpkin puree
1 cup granulated sugar
1/2 cup brown sugar
2 tsp vanilla
1 tsp pumpkin pie spice
1/2 tap cinnamon
1/2 tsp salt
1 1/2 tsp baking powder
1 egg
2 2/3 cup flour

Directions:
In a large mixing bowl, add softened butter and use a hand mixer to cream
Add pumpkin puree, granulated sugar, brown sugar, vanilla, pumpkin pie spice, cinnamon, salt, and baking powder, mix well
Add egg and mix well
Add flour slowly and mix well to combine
Chill dough for 1 hour
Preheat oven to 350
Roll balls in the cinnamon sugar so they are fully coated
Bake cookies for 11-13 minutes, rolled into 2 inch size balls



Pumpkin Smoothie Recipe:
1 frozen banana
1 1/2 cup almond or oat milk
1/3 cup Greek yogurt
-1/3 cup pumpkin purée
1 Tbs hemp hearts or chia seed or flax seed
1 scoop vanilla protein powder


Pasta Salad Recipe:
Dice 1 red bell pepper, 1 orange bell pepper, 1 cucumber
-Cook pasta, preferably the curly kind ◡̈
-Combine pasta with veggies and 1/2 cup of feta cheese, along with the following dressing:

Dressing:
1/2 cup olive oil
1/2 cup vinegar
2 Tbs Dijon Mustard
1 Tbs honey
Salt
Pepper
Oregano, Generous amount
Garlic powder, small amount
Red chili pepper flakes, as much as you want!
Whisk!
