Recipes
Granola (no added sugar)
Ingredients: mixed nuts, oats, water, evo oil
Chop some mixed nuts and put them in a bowl, add oat flakes, a little water and a little extra virgin olive oil, mix. Put some baking paper on a baking tray, turn the mixture over and spread it, cook for 15/20 minutes at 160°C (320°F)
Fig Cake (no added sugar) (small cake for two)
Ingredients: half a banana, 100 g figs, 25 g oats (or flour), 1 egg, 8 g cocoa, water, evo oil
Blend half a banana with 100 g figs, put the mixture in a bowl, add an egg and mix, add the oat flakes (or flour) and the cocoa, mix and pour the mixture into a small cake tin. Bake at 200 °C (392 °F) for 15/20 minutes
Chanterelle Soup
Ingredients: Chanterelles 100 g, onion, milk (also vegetable milk or cream, as you prefer), flour, water, salt.
Set aside some chanterelles for decoration. Sauté the onion, add the chopped chanterelles, let them cook (the ones I use were refrigerated already cooked), add 1 or 2 tablespoons of flour to thicken, mix and let cook for a couple of minutes, add about 300 ml of water, some milk (or cream) to taste, salt. Blend until creamy when the soup is cooked. Plate and decorate with the chanterelles set aside.
