British Bubble and Squeak

Boiled Potatoes 200g
Cabbage or leftover veggies 100g
Mince garlic 1 tbsp
English mustard (optional) 1tsp
Salt 1tsp
Black Pepper tsp
Smoke chilli powder 1 tsp (optional)
Flour 1tbsp (optional)
Mozzarella cheese 150g

Poached eggs

2 large eggs
White vinegar 2 tbsp
Water 2 cups

Hollandaise sauce

Egg yolks 200g
Bacon bites 120g
Butter or oil 100g
Salt & pepper to taste

Mix salad leaves
Tomato to garnish

Tips

You can substitute with other vegetables you have such as broccoli or cauliflower

I used cheese instead of oil, which also enhances the flavour

You might use the method of coating with breadcrumbs and frying, but in this recipe, I chose to bake them to reduce the grease of the patties

Bubble and squeak is a dish made using leftover potatoes and vegetables to create a recipe like rice cake or pancake. You can replace the salad greens and tomatoes with mashed avocado, served with bubble & squeak and eggs hollandaise

The key step in making Hollandaise sauce is not to use too high heat, as it can cause the eggs to cook too quickly and the sauce to become lumpy
