The process begins with fresh mutton paya, ready to be cleaned thoroughly. First, water is boiled until it’s bubbling hot 🔥, and then the payas are added to this hot water for a few minutes. After boiling, one by one, the payas are taken out and carefully scraped with a knife to remove all the hairs. 🧼🔪
This step is done with extreme care and attention — making sure each paya is clean and smooth! 💯 Once cleaned, the payas are placed on a coal barbecue🔥 for roasting, adding a wonderful smoky touch to them. After baking for a few minutes, they’re checked again — any remaining hairs are removed, ensuring a spotless finish! 👌
Then, the payas are washed again in water thoroughly to remove ash and charcoal residue. 🧽 Now, the real magic begins — the cooking process! 🍳
Each paya is sliced down the middle to allow the flavors to soak in while cooking. A large pressure cooker is fired up, and mustard oil is added for that signature village flavor. 🛢️🔥 Sliced onions are tossed in and sautéed until golden brown. Then the cleaned mutton paya is added and mixed well with love. 🤤🥄
