Banh Tieu is a Vietnamese hollow donut with a crispy sesame seed crust. The dough is flattened into small disk and then deep fried in oil until golden brown. In Vietnam, it is often sold as street food. The donut is not too sweet and enjoyed as is or with some filling.

▶️Ingredients:
1) 125g Milk
2) 25g All purpose Flour:https://amzn.to/3vmnp3q

For main dough
1) 150g Sugar:https://amzn.to/3OK8RDE
2) 3g Salt:https://amzn.to/3ryt2uo
3) 200g Whole Milk
4) 475g All Purpose Flour:https://amzn.to/3vmnp3q
5) 6g Instant Yeast:https://amzn.to/3OOeoco
6) 2g Baking powder:https://amzn.to/393hSY4
7) Sesame seeds
8) Oil for frying

▶️Cooking method
1) Take 125g milk in a bowl slowly add 25g all purpose flour.
2) Stir continuously using a whisk.
3) To catch any lumps of flour, sieve the mixture into a cooking pot.
4) Turn on the stove at medium heat. Keep the mixture on the stove top.
5) Stir well and scrape the bottom of the pot as the flour there tends to be cooked fast. Keep stirring. The mixture should be cooked around 60-70% and then remove from the heat.
6) Keep stirring the mix.
7) Transfer the mixture into another bowl and let it cool.
8) Main dough : Take sauce pan add sugar, salt and milk.
9) Keep the mixture on high heat and stir until the milk is transparent.
10) Keep stirring and ensure the sugar dissolves completely.
11) Set aside and allow it to cool down.
12) Take 475g all purpose flour in another bowl. Then add instant yeast, baking powder and mix well using a whisk.
13) Make sure the all purpose flour mixture is cool and the milk is only warm and add them into the dry ingredients.
14) Use a spatula to combine everything thoroughly.
15) Use a Stand mixer/Hand mixer to knead.
16) First knead for 5 minutes in a low speed.
17) After 5 minutes add 2 Tbsp oil.
18) Knead on low speed for 5-8 minutes.
19) Roll the dough by hand and make a ball. Keep the dough in a clean bowl.
20) Cover the dough with a kitchen towel and keep aside 2 hours for fermentation.
21) After 2 hours, release the air.
22) Then cut a small portion of the dough, about 50g
23) Shape it into a ball. Then press with your palm.
24) Stick sesame seeds on both sides of the dough. Do the same with rest of the dough.
25) Let them rest for 15 minutes.
26) After 15 minutes, press and release the air in the ball.
27) Roll it into circle shape; about 15cm in diameter.
28) Let it rest for 1-2 minutes before frying.
29) There are two sides of the dough 'up side' and 'down side'.
30) Place the dough into the oil keeping 'up side' on top. The ideal temperature of the oil is 170 °C / 340° F.
31) Let the donut float up. Then quickly rotate and let it puff up.
32) Flip sides and cook both sides evenly.
