Spring has sprung, and asparagus is flooding into the market and not a moment too soon for my tastes, thank you very much. Since this is Vegas week, I wanted to use asparagus in a new way, substituting it for pasta and eating it with one of my favorite sauces/techniques, one that is perfectly suited for pairing with many vegetables…alla carbonara. Its elegance and innovation seems a fitting Vegas-ish thing to cook. And at the same time, simple and accessible for the everyday meal.
