Green Pandan Waffles are a street food snack that can be found in Vietnam. They’re known as, “Bánh Kẹp Lá Dứa.” Here, I’ve tried to replicate the version from my local Vietnamese bánh mì shop where they make these waffles crispy and chewy.

Ingredients:
1 Cup of All Purpose Flour
1 Cup of Tapioca Starch (https://amzn.to/3WKkDkn)
1 Tbsp of Baking Powder
200ml of Coconut Milk
200ml of Milk
1/2 Cup of Sugar
1/4 Tsp of Pandan Flavoring (https://amzn.to/3YKPRd7)
2 Eggs
Vegetable Oil (For Greasing)
*4-5 Waffles in Total

Instructions:
Add all your ingredients into a large mixing bowl and mix into a smooth batter. Pre-heat your waffle maker and grease the surface with vegetable oil. When it's heated and ready, add in your batter and close the lid. Cook until there is little to no steam rising and the exterior is a nice crisp. Best served warm.
