Ingredients:

To pre-cook rice in a pot for BIKO:
1 kg Glutinous Rice (“Malagkit” rice in Filipino)
800ml coconut milk
1 tsp fine salt
1/2 tsp pandan essence or 2 pandan leaves


For Coco Jam (Minatamis na Bao - unrefined whole cane sugar with coconut milk):
1/2 panela - caramelized,
unrefined whole cane sugar
1 can pure coco milk (400g to 500g)
1/2 tsp lemon juice
1/8 or 2 pinch of fine salt

For Biko cooking proper:
1 kg glutinous rice (cooked with coconut milk but
not well done)
250g -300g brown sugar (caramelized)
(No salt. Salt is added as we cook the rice separately in a pot)

To cook rice for Bibingkang Malagkit: well done
1 kg Glutinous Rice (“Malagkit” rice in Filipino)
1 L coconut milk (2 cans)
1 tsp fine salt
1/2 tsp pandan essence or 2 pandan leaves

(just to clarify the ratio of rice to the coconut milk)

BIKO:
1 kg glutinous rice
3-4 cans coconut milk
(1 can to pre-cook rice, i usually add water and mix it with coconut milk to obtain the required amount of liquid to cook rice, 1 can to cook coco jam, 1 can to cook another coco jam to be mix with pre-cooked glutinous rice)

BIBINGKANG MALAGKIT:
1 kg glutinous rice
3 cans coconut milk
( just 2 cans to cook rice and 1 can to cook coco jam.)
