Grand Fir Sherbet & BlackBerry Dib Dab - 1 of 3 - Wild Sweets

The Grand Fir-Bert is a take on a sherbert that I was fortunate to try from @freyaforages bag of goodies on a walk @nomadicdinners. Freya runs incredible events and the food is always incredible so please check her out. I’ve adopted Freya’s fantastic fir-bert and very thankful & happy with the result.

In this first video I’m discussing the idea of a sour/sweet element for the menu served in a collaboration with @collected.fictions served at @thesleeperstore in St. Leonards-on-sea, East Sussex. (I will be running a few dinners in other areas when I have the locations agreed).

The Grand Fir (Abies grandis) is native to North America & South West Canada but found in the UK (lots in Scotland). I’ll put an identification video out later this week but the flavours are wonderful. Like a tangerine, satsuma and orange peel twang that seemed a perfect element to use in between the main course and dessert.

When I grew up the Dib Dab was a lolly pop that came with a bag of sherbet that you “dib dab”. So think a fizzy tangy fruit zip to the grand fir sherbet & a wild blackberry lollipop.🍭

It’s a bit of fun really and will post about the lollipop process very soon.
