Orange and Fennel Salad
This beautiful salad is light and bright and just the right amount of sweetness

Orange and Fennel Salad

Ingredients:

2 small blood oranges or other small orange + 2 extra for 1/4 cup juice
1 fennel bulb
6 cups red and green leaf lettuce
2 tablespoons roasted pistachios, shelled and chopped
1 tablespoon extra virgin olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
salt and pepper

Instructions:

In a small bowl, whisk together the olive oil, honey, Dijon mustard and 1/4 cup orange juice.
Salt and pepper to taste.

Cut the top and bottom of the oranges off and remove the rind from the sides.

Place the oranges on their side and cut into slices.

In a larger bowl, toss the lettuce and the dressing (amount that you prefer) together.

Top with orange slices and pistachios.
Add some fennel fronds on top.
