Sweet Saffron Rice (Seela Chawal) - 1/2 kg Rice
Ingredients:
For the rice:
1/2 kg rice (soak for 25-30 minutes)
Water (as required to boil rice)
1 1/2 tsp salt
1 tsp yellow food color
6 cloves (long)
6 green cardamoms (ilaichi)
For the syrup:
3 cups sugar
4 cloves (long)
4 cardamoms (ilaichi)
1 cup water
For garnish and extra ingredients:
3 tbsp milk powder
40-50 raisins
1 cup Ashrafi (candied fruits)
1 cup mawa (khoya)
4 tbsp powdered coconut (pisa khopra)
1 cup melted ghee
Dry fruits (optional)
Instructions:
Cook the rice:
Soak the rice for 25-30 minutes.
In a large pot, bring enough water to boil and add the soaked rice, salt, food color, cloves, and cardamoms.
Cook the rice until it is about 80% cooked (slightly underdone). Drain any excess water, if needed.
Prepare the sugar syrup:
In a separate pot, add the sugar, cloves, cardamoms, and 1 cup of water.
Stir until the sugar has completely melted and the syrup forms.
Combine rice and syrup:
Add the cooked rice into the sugar syrup and mix well.
Let it cook on low heat for 2-3 minutes, allowing the rice to absorb the syrup.
Add dry fruits and milk powder:
Add the milk powder, raisins, Ashrafi, mawa, and powdered coconut to the rice.
Mix gently and cook for another 2-3 minutes on low heat.
Finishing touches:
Add the melted ghee and stir to combine everything thoroughly.
Garnish with additional dry fruits or nuts of your choice.
Serve:
Serve the sweet saffron rice hot or warm for a delicious, festive treat!
