Have you visited Amrik Sukhdev Dhaba on your way to Chandigarh from Delhi?

Driving to Murthal for Paranthas used to be quite a ritual for Delhiites till now.

I just can’t imagine anyone being so vella to really take that trip specially for the Paranthas anymore, but the Dhaba on NH1 is quite a rage, almost like a mandatory pit stop on your way to Karnal, Ambala and Chandigarh.

I’ll hold back my opinion on the quality and taste of the food, but oh man, is this place packed even on a weekday, no matter what time you enter.

Which always prompts me to check how much business they do.

I couldn’t find any details on a private limited entity, but here’s a rough calculation on what I think is happening.

I think it can easily house no less than 500-750 people in one sitting... that’s over 150 tables of 4.

The table turnaround is about 45 minutes... So even if they do 15 table turnarounds at an average capacity of 600 for sit down meals, that’s 9000 people a day.

At an average of Rs 300 per person, that’s Rs 27 Lakhs of sales a day, and about Rs 8 crores per month.

Food costs may be lesser than 25%... no rent, as the family possibly owns the land on which it’s been operating for 56 years!

At about 500-700 employees, at an average salary of Rs 25k per month, I’d say, employee spends would be less than 5% of the top line.

You do the math.

Swear to Dal Makhni, a “Dhaba” is the best kind of food business you can set up.
