Ingredients:
10 small to medium potatoes, steamed and peeled
1/4 medium red onion, sliced
3 green onions, sliced thin
2 cups parsley, chopped very fine
6-7 shishito peppers, sliced thin
3 small cucumbers, diced small
1/3 cup olive oil
Juice of one lemon
Salt and pepper to taste

Directions:
Massage the red onions with about a tbsp of salt. Set aside. Combine green onions, parsley, peppers, and cucumbers in a large bowl. Massage the red onions a bit more, rinse the salt off, squeeze out the excess water by hand and add them to the bowl. Once the potatoes completely cool down, dice them up in 1.5-2-inch cubes and add them to the bowl. Pour over the olive oil and lemon juice. Add salt and pepper to taste.
