7 AYRANS

Servings: 3-4
Difficulty: Easy
Prep time: 3 minutes

Foamy Ayran

8 tablespoon yoghurt, prefer fatty ones
1 cup cold water
½ cup sparkling water,
1/3 cup milk
3-4 pinches of salt

• Whip yogurt into a blender
• Add rest of the ingredients and blend them at least 2 minutes.
• You can serve this beautiful foamy ayran with some dry mint sprinkles.

Pickled Beetroot Ayran

8 tablespoon yoghurt
1,5 cups spicy pickle juice
½ cup pickled beetroot juice
½ teaspoon baking soda

• Put all the ingredients and whisk them for 2-3 minutes.
• Those who cannot find spicy pickle juice can use regular pickle juice and some paprika, red pepper flakes or tabasco instead.

Curry Ayran

8 tablespoon yoghurt
2 cups of warm water
1,5 levelled teaspoon curry, any curry mix that you love is the best
3-4 pinches of salt

• Put curry into the water and whisk. Let curry open its flavour in warm water.
• Then pour the curry-water mixture to the yogurt, mix well, add salt.
• You can add some red pepper flakes or tabasco if you want it hot.

Fennel Ayran

8 tablespoon yoghurt
2 cups of cold water
4 sprigs fennel
3-4 pinches of salt

• Put the fennels with a pinch of salt in a morter and beat them until mashed.
• Add water and mix.
• Pour the green water in yogurt and whisk well.

Green Plum Ayran

9 tablespoon yoghurt
1 cup green plum
3-4 pinches of salt

• Put the green plums in juicer and get a cup of green plum juice.
• Mix the green plum juice, yogurt and salt.
• You can sprinkle some almond and serve it.

Şalgam Ayran (Pickled Turnip Ayran)

8 tablespoon yoghurt
2 cups of hot pickled turnip juice

• Mix well and drink! 😊

Cucumber and Mint Ayran

9 tablespoon yoghurt
1 cup cold water
3-4 pinches of salt
2 Çengelköy cucumber or 1 large cucumber
10 fresh mint leaves

• Put cucumber and mint in a blender and blend them.
• Add water, yoghurt and salt then blend again.
