Rice and green pigeon peas

-2 lb rice
-2 canned pigeon peas or gandules
-1 canned coconut milk
-2 cups of water
-4 garlic cloves, crushed
-1/2 onion small diced
-1 cubanelle pepper or light green sweet pepper
-1 handful cilantro
-2 tbsp chicken bouillon
-pepper to taste
-1 tsp oregano
-1/2 tbsp yellow colorant

Prep:
Like in the video, sauté those ingredients on a few spoons of oil, then add the Gandules with the water in the can, then the coconut milk, water and bring to a boil, at this point, add the rice and let the liquid evaporate completely before covering, stirring from time to time so it doesn’t stick too much at the bottom, When dried, add the cilantro on top and cover x 20-25 mins on medium low and enjoy !
