Ingredients

1 ½ cups of grated carrots – Fresh, finely grated carrots add natural sweetness and moisture.
1 cup of pitted dates – Dates provide rich sweetness and are a healthier alternative to refined sugar.
1 ½ cups of all purpose flour – You can substitute with all-purpose flour for a lighter texture.
½ cup of vegetable oil – For moisture and richness. You can also use melted butter or coconut oil.
2 eggs
1 tsp baking powder – Helps the cake rise and become fluffy.
½ tsp salt – Enhances the flavor of the cake.
1 tsp vanilla extract – For a subtle, sweet aroma.
1/4 cup chopped walnuts (optional) – For a crunchy texture.
Instructions

Preheat the oven to 350°F (175°C) and grease a cake pan (8-inch round or square) or line it with parchment paper.

Prepare the dates: Soak the pitted dates in warm water for 10 minutes to soften them. After soaking, drain and blend them into a smooth paste using a blender or food processor.

Grate the carrots: Use fresh carrots and grate them finely. Set them aside.

Mix the dry ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon powder, nutmeg, and salt.

Prepare the wet ingredients: In another bowl, mix the vegetable oil, milk, vanilla extract, and the date paste until well combined.

Combine wet and dry ingredients: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in the grated carrots and chopped walnuts (if using).

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
