This is a fantastic steak to cook in your wood fired oven - the picanha is full of flavour and super; add to that mix a little bit of oak and mesquite smoke and a glass of big red wine and what a feast you'll have!!

The picanha steak is cut from the top end of the rump and is named after the spot where the gauchos would prod the cattle with their poles - the picana - to keep them moving.

It has a layer of fat at one end so keep that on while you're cooking it for extra flavour and protection for the meat. It has a superb flavour and texture - remember to cut it across the grain and cook it rare-medium rare.
