This dish and the cooking process native to the Philippines, adobo refers to the method of marinating meat, seafood, or vegetables (any other things too!) in a combination of soy sauce and vinegar. This marinade also includes other herbs and flavorings like garlic, bay leaves, and whole peppercorns.

There are many different ways people love to cook adobo, like as you can make it with a slow cooker or crockpot too. Even if you're able to cook it on the stovetop that is a skillet quick and easy way.


The chicken adobo gained popularity all over the world day by day because of its delicious taste and ease of preparation. Classically and quintessentially because while there have been several variations of adobo across the years, chicken adobo remains one of the most popular.

Recipe Card:

Ingredients:
Oil - 2 TBSP
White Onions - 2 Medium Sized
Chopped Garlic - 5 Cloves
Chicken - 500gm
Soy Sauce - 1/3 cup
Brown Sugar - 2 TBSP
Black Pepper - 3 TSP
Bay Leaves - 2-3
Vinegar - 1/4 CUP
Chicken Broth - 1 Cup

Method:
1) Put Oil in a pot. Add your onions. Let them cook for a minute and then add chopped garlic. Give it a stir. Let it cook for another minute or two.
2) Now place your chicken on the side. Use Thigh and drumsticks for extra flavour.
Cook each side for 5 minutes. until you see the crust turning golden brown.
3) Next, add Soy sauce, Brown Sugar, Black Pepper, Bay Leaves, Vinegar and Chicken Broth.
Mix it well and then let it cook on medium heat until the water has dried out and the sauce has become thicker. Keep pouring the sauce over the chicken while its cooking so the chicken can absorb the flavor.
4) Serve it over white rice. Garnish it with spring onions and your easy, one pot, delicious Filipino Chicken Adobo is ready to serve.
