【Homemade 65oz Tomahawk Steak】

【Ingredients】
Tomahawk steak 1 pc
Salt & pepper ½ tbsp to season
Garlic powder ½ tbsp to season
Fresh rosemary 1 small bunch
Fresh thymes 1 small bunch
Skin-on garlic cloves 6 pcs

【Steps】
1. Trim the excessive tissue on the bone of the tomahawk steak. Save the fatty parts for later.
2. Season the steak with salt, pepper, rosemary, and garlic powder.
3. Wrap the seasoned meat with a cloth or kitchen towel and let it sit in the fridge for 6-24 hours.
4. Pierce a temperature probe into the thickest part of the steak and sous vide until the core temperature reaches 57ºC. Alternatively, cook the steak (vacuum sealed) in a 57ºC water bath for 3 hours.
5. While the steak is cooking, prepare your side dishes.
6. Heat a skillet over medium-high heat and render the trimmed fatty parts.
7. Add rosemary sprigs, thyme sprigs, and skin-on garlic cloves to the skillet for aroma.
8. Remove the herbs and garlic once lightly charred, then add the steak to sear.
9. Turn the heat to high and sear the steak for 1-2 minutes on each side. Sear the sides for 20-30 seconds.
10. For an even sear, use a blow torch to finish grilling the steak.
11. Plate the steak and sides.
