Cooking time approximately 8-9 hours
Prep time / approximately 1 hour

Use a 20-30 Qt Heavy Pot

► INGREDIENTS
*3 gallons water (additional half gallon if needed)
*4 C chopped green peppers (3 Lg peppers)
*5 C chopped white onion (4 Lg onions)
*4 1/2 C chopped celery (1 bag)
*1 C dried whole bay leaves
*2 bulbs garlic crushed fine or minced
*3/4 C seasoning of choice (more if needed) O used Slap ya Mama and Tony’s in the video
*1 1/2 Tbsp Cheyenne pepper
*1 1/2 C thick roux
*10 lbs peeled large raw shrimp (peel, deveined and was) Most shrimp, if purchased peeled and frozen are already deveined
*2 C dried shrimp
*10 large links smoked sausage or smoked andouille sliced
*5 C raw chicken gizzards
*2 C raw chicken livers
*10 chicken legs or thighs
*12 smoked turkey necks (size doesn’t matter)
*2 dozen raw blue crabs (for gumbo)
*8 12oz bags raw cut okra
*3 bottles gumbo file (1.25 oz bottles)

► PREPARATION INSTRUCTIONS

Pour 3 gallons of water in pot and bring to a boil. While water is coming to a boil;

chop green peppers, onion, celery and garlic
*peel and clean shrimp
*clean and wash blue crabs
*cut smoked sausage or andouille in 1/2 inch circles
*wash and clean chicken, liver and gizzards
*place frozen okra on parchment paper lined cookie sheets sprayed with oil so okra will not stick. Bake on 350 for approximately 1 hour until slim is gone.

► COOKING INSTRUCTIONS

Add livers, gizzards, chopped vegetables, garlic, bay leaves, Cheyenne and seasoning to boiling water. Bring back to a boil and boil approximately 15 minutes. Lower heat to med/low and let cook for approximately 2 hours. Add andouille or smoked sausage and cook for an hour. After that, Add smoked turkey necks, dried shrimp, 3 bottles of gumbo file and cook for another hour. Then add raw shrimp and blue crabs and cook for 45 minutes to an hour. Then add roux and cook for 20 minutes. Then add chicken legs and cooked okra and cook for 30-45 minutes.

Serve over cooked rice and enjoy!
