I end up making this khichdi recipe multiple times a week - it's easy, it's wholesome and it feels like home every single time. You can add any vegetables of your choice, including potatoes. This Assamese Style khichri comes together in one kadhai and there is no pressure cooker required. If you soak the lentils before cooking, it cooks very easily. Ingredients

1/2 cup rice
1/4 cup masoor dal
1/4 cup moong dal
3 tbsp mustard oil
1 dried red chilli
2 slit green chillies
1 tsp panchphoran
1 tbsp ginger garlic paste
1/2 cup finely chopped onions
1 medium tomato
Salt to taste
1 medium carrot
1 small cauliflower
1/2 tsp turmeric powder
1 tsp cumin powder
1 tbsp coriander powder
1/2 tsp black pepper powder
1 litre water
Coriander leaves, finely chopped (for garnish)
Ghee for garnish
