Ingredients: Yield: 20 garlic knots
3-1/2 cups whole purpose flour
1-1/2 cup of warm water (115f )
2-1/4 tsp dry yeast (or a cube of fresh yeast)
2 tsp of sugar
1-1/4 tsp of salt
3 tablespoons olive oil
1/4 cup of flour for dusting
Ingredients (metric)
500 g of flour (whole purpose)
350 ml of warm water
7 g dry yeast (or a cube of fresh yeast)
10 g of sugar
8 g of salt
2 tablespoons olive oil
50 g of flour for dusting
For the topping
5 tbsp (71g) olive oil or unsalted butter melted
3 garlic cloves, minced
1 tbsp chopped fresh parsley
1 pinch salt and pepper
optional after baking: 1 tbsp grated Parmesan cheese
Instructions:
Into a large bowl (or a stand mixer's bowl if you have one,
pour 1/2 cup of lukewarm water, the yeast, and the sugar.
cover and let the mixture sit for 10 minutes until it's nice and frothy.
After 10 minutes, add to the yeast mixture in 1 cup of lukewarm water, the flour, sugar, and the olive oil. Mix everything together until combined. Once a dough starts forming, replace your mixer's paddle attachment with the hook attachment. If you don't have a mixer, simply use your hands to knead the dough into a compact ball (about 5 minutes). Place the dough ball into a greased bowl and cover with a piece of greased plastic wrap. Put the bowl in a warm spot. Allow the dough to rise (approximately doubling in size) for 1 and half hour.
When the dough is ready, using floured hands on a lightly floured work surface, roll the dough out into a large square shape, of about 1 inch thick, and 14×10 inch (40x26cm) square.
Using a pizza cutter, or a bench scraper, cut the dough into 14, 1-inch
equal pieces (40-2 cm). Then, cut it in half so you will have 20, 7 inch strips. Roll each piece into a rope that's about 7 inches long. Tie each rope into a knot, tucking the ends underneath the knot.
Lightly dust with flour and cover the knots with a clean kitchen towel.
Let the knots rise in a warm spot for at least 45 minutes or until doubled in size.Towards the end of the rise time, preheat oven to 375°F (190°C).
Bake the bread knots at 375°F (190°C) for 20 to 25 minutes, or until the tops are nice and golden. While the bread bakes, mix the chopped garlic, chopped parsley, salt, black pepper, and olive oil together.
Once the bread is done baking, allow them to cool for 5 minutes so they are just cool enough for you to handle them but still warm to the touch. Brush the top surface of each bread with the garlic mixture, and then top the rolls surfaces with grated parmesan if desired.
