Ingredients:
• 500 g celeriac, diced / chopped
• 2 medium carrots, 100 g, diced / chopped
• 1 small onion, 100 g, chopped
• 3 cloves of garlic, finely chopped
• 1 tbsp chili flakes or crushed dried green peppers
• 1 cup / 250 g plain yogurt
• 3 tbsp olive oil
• 1/4 tsp black pepper
• 2 tsp salt
• 2 liters water
Sauce:
• 2 tbsp olive oil
• 2 tsp dried mint
• 2 cloves of garlic, crushed
• Fresh dill sprigs to garnish (optional)
Instructions:
1. Finely chop the onions, garlic and chop the carrot and set aside
2. Peel the celeriac and chop into small dice
3. Heat 3 tbsp olive oil in a large pan and add the onions, stir and cook for 2 mins until soft
4. Add the garlic, cook until fragrant, then add the chopped carrots and celeriac
5. Season with 1 tbsp chili flakes, 1/4 tsp black pepper, 2 tsp salt.
6. Cook and stir occassionally for 5 mins until fragrant and combined.
7. Add 1.5 liter hot water, bring to a boil and switch to low heat
8. Let it simmer covered for 15 – 20 mins until the celeriacs and carrots are soft.
9. Using an immersion blender, blend the ingredients into a smooth puree.
10. In a small sauce pan, combine 1 cup yogurt with 2 cups (500 ml) cold water.
11. Slowly bring to a boil while stirring constantly always in the same direction.
12. When the yogurt mixture starts boiling, slowly add into the soup pan, stir and cook for 2 mins until combined and smooth.
13. To make the sauce; crush 2 cloves of garlic.
14. Add 2 tbsp olive oil into a small pan on low heat, add the garlic, stir and cook for about 1 min until fragrant.
15. Add 2 tsp dried mint, give it a quick stir and remove from the heat.
16. Pour and stir the sauce into the soup and optionally leave some of the sauce for garnish.
17. Serve the soup in a bowl and garnish fresh dill sprigs and extra mint oil.
