We typically don't advise clients to attend their overseas spouse or fiance's visa interview as you are not allowed in, and it is overall a waste of time for you. The best thing you can do is make sure they are prepared.
You may be aware of something called a Stoke's interview, which is where a couple is split apart and questioned separately at USCIS. We had a client who decided to attend their spouse's overseas interview, and because she was there, they were both separated and had a Stoke's interview performed on them. Because the couple did not live together at the time answering the types of questions they ask in these interviews was incredibly difficult and could not have helped their case positively. The case ended up getting denied.
Nothing good can happen from attending your overseas spouse's interview.
