After learning how to make Cantonese style Sweet and Sour Pork at home, I stopped ordering my favorite Chinese takeout from my favorite restaurant, sorry Mr. Chin... This recipe is so good it will leave your lips smacking for more sweet and sour porky goodness. This will easily become one of your favorite go to Chinese takeaway favorite recipe to make at home.

Ingredients:

1 medium onion
3 garlic cloves
1 inch peeled ginger
Some bell peppers. Any color you like.
1 small wedge of pineapple chunks
1 green scallion

Mince the garlic and ginger. I like to cut my onions into large pieces. The bell peppers too. Just make sure they're all roughly the same size to cook evenly.

Pork and Marinade
400grams pork spare ribs
2 tbsp light soy sauce
1 1/2 teaspoon pure sesame oil
1 1/2 teaspoon Chinese cooking wine
1 teaspoon ground white pepper
1 teaspoon baking soda
1 tablespoon potato starch (or cornstarch)
1 tablespoon cooking oil

Mix everything in a bowl and marinade in fridge for at least 30 minutes.

Sweet and Sour Sauce
1/4 cup Chinese black vinegar
1/4 cup tomato puree
1/4 tomato ketchup
1/4 cup brown sugar
3 tablespoon pineapple juice
1 tablespoon cornstarch (or potato starch)

Mix in a bowl and set aside.

Breading for pork
1 cup cornstarch
1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon ground white pepper
1 teaspoon baking powder
2 egg whites beaten

Coat pork spare ribs in egg whites then with flour mixture. Make sure all the pieces resemble powdered donuts. Then squeeze each piece lightly.

Cooking Instructions:

Heat oil up to 180℃ or 350℉. We'll be frying the pork twice. Fry pork for about 1 to 2 minutes. Careful not to overcook. Coating should still look pale yellow.

Before second fry make sure oil is back up to temperature. Fry the spare ribs for another minute. The color should be one shade darker. Remove and set aside because it's time to make the sweet and sour sauce.

Put two tablespoons of cooking oil to hot wok or pan. Add minced ginger and garlic. Cook for 15 seconds make sure to move around so it won't burn. Add onions and bell peppers. Cook until slight softened and onions start turning translucent. Add the sauce and cook until it starts to boil and reduces slightly.

Then toss in the fried spare ribs and coat with sauce. Turn off the heat and add the scallions. It's done and ready to enjoy with a bowl of rice and frosty beer!
