Special Broth Steamed Fish
Ingredients:
500-600g of Grouper fish tail (season with salt and put a few slices of ginger on top of the fish tail)
A few slices of ginger (put on top of the fish tail)
5-6 prawns
2-3 tablespoons of chopped garlic
1 tablespoon of chopped fresh corianders (or chopped spring onion)
Some chopped red fresh chilies (or bird’s eye chilies)

Broth Base:
1 tablespoon of anchovies (put into the tea/soup bag)
1 bowl of chicken stock (2 teaspoons of Ah Pa’s homemade chicken powder mix with hot water)
Pinch of salt (to season)
Pinch of sugar (to season)
Few drops of Ong Ky premium fish sauce (to season)
Few dashes of white pepper (to season)
A little bit of Shao Hsing cooking wine (to season)
Some fried garlic (to garnish)
