Bhuna Gosht Recipe
Ingredients:
• ½ kg meat/lamb/mutton (گوشت / بکرے کا گوشت / بھیڑ کا گوشت)
• ¼ onion (پیاز)
• 2 tablespoons ginger garlic paste (ادرک لہسن کا پیسٹ)
• ½ cup yogurt (دہی)
• 2 green chilies (ہری مرچیں)
• ½ cup green coriander (ہرا دھنیا)
• 1 teaspoon salt (نمک)
• 1 teaspoon paprika powder (پاپریکا پاؤڈر)
• ¼ teaspoon turmeric powder (ہلدی پاؤڈر)
• 1 curry leaf (کڑی پتا)
• 2 tablespoons dry whole coriander (ثابت دھنیا)
• 1 tablespoon cumin seeds (زیرہ)
• 2 cinnamon pieces (دار چینی کے ٹکڑے)
• 4 cloves (لونگ)
• 2 black cardamoms (کالی الائچی)
• 4 green cardamoms (سبز الائچی)
• 1 teaspoon whole black pepper (ثابت کالی مرچ)

Preparation:
Step 1: Preparing the Whole Spice Powder
1. Heat a pan on medium flame and add all the whole spices: curry leaf, dry coriander, cumin seeds, cinnamon pieces, cloves, green cardamom, black cardamom, and whole black pepper.
2. Roast the spices for about 3 minutes until they release a fragrant aroma.
3. Turn off the flame and transfer the roasted spices to a plate. Let them cool completely.
4. Once cooled, grind the roasted spices into a fine powder and set aside.

Step 2: Cooking the Meat
1. Heat oil in a non-stick wok and add the chopped onion.
2. Fry the onion until golden brown.
3. Add the meat to the wok and fry until it turns golden brown.
4. Once the color of the meat changes, add a little water and continue roasting.
5. Add the ginger-garlic paste, mix well, and sauté for 1 minute.
6. Add all the powdered spices (salt, paprika powder, and turmeric powder) and mix thoroughly.
7. Pour in some water and roast the meat for about 5 minutes.
8. Add more water as needed and continue roasting the meat.
9. Once the meat is well roasted, add enough water to tenderize it.
10. Mix well and transfer the mixture into a pressure cooker.
11. Close the lid and cook until one whistle sounds, then let it cook for another 30 minutes on low heat.
12. After 30 minutes, turn off the flame and carefully release the pressure from the cooker.

Step 3: Final Cooking and Serving
1. After the meat is tender, transfer it back to the wok.
2. Add yogurt and green chilies, then roast the meat until the oil separates.
3. Once the oil separates, add the ground spice mix and mix well.
4. Roast the meat again for a few minutes to enhance the flavor.
5. Finally, add freshly chopped green coriander, mix well, and turn off the flame.
6. Bhuna Gosht is now ready to serve! Enjoy with naan or rice.
