Basil Pesto

Ingredients:
• 1 cup fresh basil leaves
• 2 tbsp toasted pine nuts
• 2 tbsp grated Parmigiano-Reggiano
• 3 tbsp extra virgin olive oil
• Salt and pepper to taste

Instructions:
In a food processor, blend all ingredients until smooth. Transfer to a bowl and set aside.

Gnocchi

Ingredients:
• 6 medium boiled potatoes, peeled
• 5 ½ cups 00 flour
• 1 egg
• Pinch of salt

Instructions:
Pass the boiled potatoes through a ricer onto a clean work surface. Add the flour, egg, and salt. Knead until a smooth dough forms. Cut the dough into smaller portions, roll into ropes, and cut into 1-inch pieces. Shape each piece into gnocchi using your index and middle fingers or a gnocchi board.

Bring a large pot of salted water to a boil. Cook gnocchi in batches until they float, about 2 minutes. Drain well, then toss gently in a large pan with the prepared basil pesto.

Serve with a sprinkle of Parmigiano-Reggiano. Buon appetito!
