Christmas Cranberry Tiramisu Recipe
Ingredients:
For the base:
☕ Eggs - 4 pcs
☕ Sugar - 80 g
☕ Vanilla essence - 1/2 tsp
☕ Espresso - 400 ml (warm)
☕ Mascarpone cheese - 500 g
☕ Ladyfingers biscuits - 30 pcs.
For the cranberry layer:
🍊 Fresh cranberries - 250 g
🍊 Sugar - 40 g
🍊 Water - 40 ml
🍊 Orange juice - 30 ml
🍊 Orange zest - from 1 orange
For garnish:
🍫 Cocoa powder - as needed
Instructions:
Prepare the Cranberry Sauce: In a saucepan, combine cranberries, sugar, and water. Cook over medium heat, stirring occasionally, until the berries soften. Add orange juice and orange zest, and continue cooking until the berries break down. Puree the mixture, then let it cool completely.
Make the Cream Sauce:
Separate the egg yolks from the whites.
Beat the yolks with sugar until light and fluffy (around 10 minutes), then mix in the vanilla essence.
While the yolks are being whipped, prepare the espresso and allow it to cool.
Gradually add mascarpone cheese to the yolk mixture, beating on low speed until smooth and creamy.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the whites into the yolk mixture using a spatula, ensuring a light, airy consistency.
Assemble the Tiramisu:
Quickly dip the ladyfingers in espresso, coating all sides, and arrange them in a single layer in a large dish.
Spread a layer of the mascarpone cream over the ladyfingers, followed by a layer of cranberry sauce.
Add another layer of ladyfingers, then finish with a final layer of cream. (Depending on your dish size, you might get two layers.)
Chill: Cover the dish with plastic wrap and refrigerate for at least 3 hours or overnight to allow the flavors to meld.
Serve: Before serving, dust the top with cocoa powder. Optionally, decorate with meringue, white chocolate, or marshmallows for extra flair.
