Today, we're sharing another great Korean summer recipe🌞


In summer, I love eating leafy greens and I think the best way to enjoy them is to make “Ssambap”.
With “Ssam” meaning “wrapped” and “Bap” meaning “rice”, it basically means “veggie wrapped rice”.

To make it more delicious, we’re making Gang-doenjang to use as sauce.
With “Gang” meaning “thickened” and “Doenjang” meaning “Korean fermented soybean paste” that we use for our everyday cooking(like Doenjang-jjigae, a.k.a. soybean paste stew).

One bite into your Ssambap,
You’ll immediately fall in love with combination of different flavors and texture❤️




두부강된장과 쌈밥 ｜ Dubu Gang-doenjang & Ssambap(Tofu soybean paste stew & veggie wraps)｜ Serves 2

Ingredients

[For Ssambap]
¼ White cabbage
5-6 Leafy greens: Swiss chard, beet greens, etc.
2 bowls of cooked rice

[For Gang-doenjang]
Tofu ½ pack(150-200g / ½ lb)
Onion ½ cup (½ medium onion)
Zucchini ½ cup (⅓ small zucchini/courgette)
Green onion ¼ cup (1 stalk green onion)
Hot green chili(optional) 1 ea.
Dried shiitake mushroom 2 ea.
Warm water 1 cup

Perilla oil(or neutral vegetable oil) 1teaspoon
Doenjang(Korean soybean paste) 2 ½ tablespoons
for artisanal/homemade doenjang 2 tablespoons
Gochugaru(Korean chili pepper powder) ½ tablespoon

🥬Veggies in Gang-doenjang can be substituted with other leftover veggies! Try your own combination 🥬🥒🌶
🇪🇺For 1-2-3 Kimchi fans in Europe: opt for "Pointed cabbage(Spitskool🇳🇱, Chou Pointu🇫🇷, Spitzkohl🇩🇪)" for a softer & lighter texture
