MAPLE & SOY SAUCE OLD FASHIONED
(2 servings)

4 oz Bourbon
2 Tsp Maple Syrup
1 ml Angostura
6 Drops Soy Sauce

CHIPOTLE OAXACA OLD FASHIONED
(2 servings)

3 oz Reposado Tequila
1 oz Reposado Mezcal
1 Tsp Agave Syrup
1 ml Angostura
1 gr Trimmed Chioptle Pepper

How to infuse the tequila with chipotle peppers :
Remove the pith and seeds from the
Chipotle and preserve 1 gr.
Add to a jar with the Tequila, close and
let infuse 2 hours.
Fine strain and measure. If some liquid
got absorbed, add more tequila to reach
3 oz.

TRADEWINDS OLD FASHIONED
(2 servings)

3 oz Havana Club 7 or another aged Spanish style rum
1.5 oz Plantation OFTD Overproof Rum
2 Tsp Apricot Liqueur
1 Tsp Demerara Gum Syrup
1 ml Angostura
0.5 ml Lime Bitters
15 ml Melted Coconut Oil

How to fat wash the rum :
In a jar, add the two rums and the
coconut oil.
Close, shake briefly and leave resting at
room temperature until you see a clear
break between the rum and the oil.
Place in the freezer until the oil solidifies
and strain out the solid using two layers
of cheesecloth.

CHARDONNAY SAZERAC
(2 servings)

2.5 oz Rye Whiskey
1.5 oz Cognac
10 ml Chardonnay (Buttery & Oaky)
10 gr Sugar
2 ml Peychaud’s Bitters
1 ml Absinthe

JAPANESE REVOLVER
(2 servings)

4 oz Japanese Whiskey
0.5 oz Coffee Liqueur
2 Tsp Demerara Gum Syrup
1 ml Angostura
1 Small Dash Cinnamon Tincture
